Surprise! Accounting is the Hot New Major

There was a time when accounting was the boring college major that many people regretted signing up for. A constant barrage of numbers, statistics and spreadsheets was none too interesting.

Boy, have times changed! Thanks to recent accounting scandals by companies like Enron, there is a high demand for accountants and auditors.

According to the Job Outlook 2005 survey, accounting comes out on top as the most in-demand major on college campuses. Forget dot com start ups. Cleaning up a company�s accounting books is what�s in.

But can accounting be sexy?

�All the focus on accounting created a perception to students that accounting matters and is perhaps even sexy,� says Ira Solomon, head of the department of accountancy at the University of Illinois at Urbana-Champaign.

Colleges are scrambling to find more accounting teachers and professors to replace those retiring. Not an easy task, since there are twice as many accounting faculty openings than applicants to fill them.

Here are the top 10 most in-demand college majors as surveyed by the National Association of Colleges and Employers (NACE):

4) Business Administration/Management
5) Economics/Finance

If you�re good with numbers and a stickler for details, you might want to consider accounting as a good career choice. However, you�ll probably have to take a number and wait in line behind all those other future accountant hopefuls.

Place on tray. Prepare vegetables, removing ends and strings from pea pods, slicing mushrooms, green part of onions, and the bamboo shoots. Add to tray. Mix soy sauce, cornstarch, sugar, and salt. Heat 1 tbls of oil in skillet over moderate heat, add all the nuts, and cook 1 min shaking the pan, toasting the nuts lightly. Remove and reserve. Pour remaining oil in pan, fry chicken quickly, turning often until it looks opaque. Lower heat to low. Add pea pods, mushrooms, and broth. Cover and cook slowly for 2 mins….

It is eaten at breakfast with fried meat, fish, omelet, country captain, or some other curried dish, and, being invariably followed by toast and eggs, jams, fruit, &c., one coonkee, which contains about as much as an ordinary breakfastcup, or say half a pound, will always be ample for four tolerably hearty consumers. There are two sizes of coonkees, large and small: reference is here made to the small coonkee, well filled. The quantity, however, of raw rice for a party of four should not exceed half a pound. The rice at dinner is usually preceded by soup, fish, roast, and made dishes. The best or generally approved qualities of rice for table use are known as the bhaktoolsee, the banafool, the bassmuttee, and cheeneesuckur. In purchasing these, or indeed any other approved quality, care must be taken to avoid new rice and what is called urruah, which latter has been put through some process of boiling,or damped, and then dried. Both are considered unwholesome for general daily consumption, and few Indians will use them. Good rice when rubbed in the palm of the hand, and cleared of dust, will appear of a bright and nearly transparent yellowish colour; whereas the urruah will be found of a dull whitish hue, and the grain streaked and speckled with white powder, which crumbles on the application of a needle’s point. The first edition of 1884 contained but 5 pages of type; the second of 1898, 14 pages. Only by conciseness has it been possible to give even a summary of the principles of dietetics within the limit or this pamphlet. Should there appear in places an abruptness or incompleteness of treatment, these limitations must be my excuse. Those who wish to thoroughly study the science of food are referred to the standard work, "Food and Dietetics," by Dr. R. Hutchison (E. Arnold, 16s.). The effects of purin bodies in producing illness has been patiently and thoroughly worked out by Dr. Alexander Haig. Students are referred to his "Uric Acid, an epitome of the subject" (J. & A. Churchhill, 1904, 2s.6d.), or to his larger work on "Uric Acid." An able scientific summary of investigations on purins, their chemical and pathological properties, and the quantities in foods will be found in "The Purin Bodies of Food Stuffs," by Dr. I. Walker Hall (Sherratt & Hughes, Manchester, 1903, 4s.6d.). The U.S. Department of Agriculture has made a large number of elaborate researches on food and nutrition. My thanks are due to Mr. Albert Broadbent, the Secretary of the Vegetarian Society, for placing some of their bulletins in my hands, and for suggestions and help. He has also writtenseveral useful popular booklets on food of a very practical character, at from a penny to threepence each. Popular literature abounds in unsound statements on food. It is unfortunate that many ardent workers in the cause of health are lacking in scientific knowledge, especially of physiology and chemistry. By their immature and sweeping statements from the platform and press, they often bring discredit on a good cause. Matters of health must be primarily based on experience and we must bear in mind that each person can at the most have full knowledge of himself alone, and to a less degree of his family and intimates. The general rules of health are applicable to all alike, but not in their details. Owing to individual imperfections of constitution, difference of temperament and environment, there is danger when one man attempts to measure others by his own standard.
